Enhancing public health through food learning: a dietetic student's journey on placement at The School of Artisan Food

Hello, I'm Lydia, a Dietetics student at the University of Nottingham. Over the past two weeks, I've had the incredible opportunity to complete a placement at the School of Artisan Food, working on the Best Food Forward project. My main focus has been on developing guidance for the use of the Food Card resources across the country. 


The Food Cards are a valuable resource already implemented in many secondary schools across Nottinghamshire and Derbyshire. They offer evidence-based knowledge on portion sizes, food groups, preparation, storage, and cooking methods, all aligned with the Eatwell Guide. They serve as versatile tools that promote informed food choices among individuals. 


During my placement, I actively participated in hands-on education sessions designed for both teachers and students. These sessions combined practical cooking skills with evidence-based nutrition knowledge, creating engaging and enjoyable learning experiences. These interactions provided me with invaluable insights into effective communication and collaboration, which are essential for successful public health initiatives. Witnessing such enthusiastic engagement from participants emphasised the value of nutrition education in shaping healthier communities. 


The Best Food Forward project takes a holistic approach to food education, emphasising inclusivity and accessibility for all. It has been enlightening to see how dietitians play a crucial role in public health beyond clinical settings. This experience has broadened my perspective on the diverse opportunities for dietitians in community health initiatives, as demonstrated by this impactful project I am privileged to have been part of. 

Everyone at the School of Artisan Food has been incredibly welcoming and passionate about their work, which has made my experience here truly inspiring. I've had the pleasure of meeting and learning from dedicated individuals. 


This placement has not only deepened my understanding of nutrition education but has also inspired me to pursue future opportunities where dietitians can make meaningful impacts in public health settings. I look forward to applying the knowledge and skills gained here as I continue my journey in dietetics.
